Instructions

  1. In a mixing bowl add the dry ingredients and whisk out any lumps.
  2. Create a well in the centre of the dry ingredients and add the wet ingredients. Rest for 1 minute to create a buttermilk with the added liquids and continue whisking until the batter is combined. Try not to over mix the batter.
  3. Add your extra olive oil to a pan and add to the stove on medium heat.
  4. When the pan has warmed scoop the pancake batter with a ladle and add the batter to the centre of your pan. I normally do 1 big one at a time.
  5. After 1-2 minutes the pancakes will be fully covered in bubbles on the batter, gently flip. *if you are using a non-stick pan try and coat the pan with a drizzle of oil between each pancake
  6. Repeat this process until the batter is finished.
  7. Enjoy warm with vegan butter and maple syrup or topping of choice.
  8. These pancakes will last 3-4 days in the fridge in an airtight container.
