
Sticky Date Tiramisu
Imagine a dessert that combines flavours of a classic sticky date pudding with the creamy layer of tiramisu cream.
The pudding is soaked in a coffee caramel syrup, mimicking the espresso soaked ladyfingers in a traditional tiramisu. A layer of tiramisu cream and then dusted in cocoa.

Instructions
- Preheat the oven to 180°. Grease or line a 20 x 20 cm tall cake or tin.
- Pit the dates, put them in a bowl with the bicarb soda and cover them with boiling water. Leave them for 15–20 minutes or until the dates have softened.
- Use a blender to mix or a fork mash the dates, water, and bicarb together. The mixture should start to thicken and combine together into a sloppy paste. Set aside.
- Add the softened vegan butter and sugar into a bowl and cream them until light and pale in texture. This is best done in a stand mixer or with electric beaters.
- Add the vegan milk and gently stir until combined.
- Fold in the flour and baking powder and gently mix.
- Add the date, water and bicarb mixture into the bowl with the rest of the ingredients and gently stir until combined. Try not to over mix.
- Bake for 40–45 minutes. Test with a skewer to see if it’s ready. If the skewer comes out clean your sticky date is ready.
- Add all of the caramel sauce ingredients into a pot on the stove and simmer on medium heat until the sugar is fully dissolved. Whisk consistently to prevent the caramel from burning. Remove the pan from the heat and let is cool.
- Poke around 20+ holes into the cake and pour 3/4 of the caramel over the top of the cake whilst it’s still in the cake tin. Set in the fridge for 1 hour or until the cake has fully cooled.
- Whilst the sticky date is cooling, add all of your tiramisu cream ingredients into a mixing bowl and whip until thick and creamy.
- Scoop the thickened cream into the cake tin on top of the sticky date pudding. Smooth out the mixture until it forms an even layer on top and rest in the fridge for 3-4 hours or overnight.
- Once set, dust with cocoa, serve and drizzle the remaining caramel on top of each piece.
- This cake will last 4 days covered in the fridge.
